Natamycin is used as a food additive to prevent mold and yeast growth on food surfaces.
Regulatory Status: Natamycin is designated as INS No. 235 by the WHO/FAO. In China, it was approved as a food preservative in 1997, and it is currently used in over 50 countries.
Safety: Natamycin is very poorly absorbed from the gastrointestinal tract, which contributes to its safety for this use. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has re-affirmed an Acceptable Daily Intake (ADI) of 0–0.3 mg/kg body weight.
Applications: Natamycin is primarily used for the surface treatment of various foods, including cheese, sausages, and baked goods, to inhibit mold growth without needing to be absorbed into the food.
