What is SAC and How is it Formed?


SAC is a stable, water-soluble, and highly bioavailable amino acid derivative. It doesn't start out in raw garlic. Instead, raw garlic contains large quantities of a precursor peptide called γ-glutamyl-S-allyl-cysteine (GSAC) .

During the months-long process of creating black garlic—which involves aging whole garlic bulbs at a controlled high temperature (60-90°C) and humidity—an enzyme naturally present in garlic called γ-glutamyl transpeptidase is activated . This enzyme cleaves the GSAC molecule, converting it into S-allyl-L-cysteine (SAC). Through this process, the SAC content can increase 5 to 10 times compared to raw garlic 


Black Garlic Extract Powder is a concentrated, dehydrated form of this fermented product, often standardized for key compounds. SAC is the most important and well-studied compound in aged and black garlic.
